Yummy In your Tummy Butternut Squash Soup Recipe.

Ok so anyone who knows me knows I DON’T like soup. Lipton chicken noodle, Campbells chicken noodle, is about the jest of it. Not even home made Chicken soup. HOWEVER one time some where, some event of some sort where I was served food with out getting to choose it, I was served a nice basic Butternut Squash soup and I like it! Next I got a box of Campbells butter nut squash soup and it was ok, but a little much stuff in it for me. So I started searching and trying and came up with this!

I like this as Its Very basic and you can really add seasonal veg, and change as your like.

Butternut Squash:
3 lb Butternut squash, Peel
3 Large Carrots
1 large, or 2 med Potatoes,
2 Veggie Bullion Cubes
6 C water
1/2 C chicken Stock
1/4 tsp nutmeg.
Salt and Pepper to Taste

peel core and cube all veggies and boil in water, and stocks until soft. add nutmeg towards end. Blend in food processor or with stick blender until creamy and smooth. add sour cream when serving if you want it creamy. 

Other things you can add if you have are sweet potatoes, celery, cream for a creamy soup. you could had a heap of veggies I dont even like to make it more of a veggie squash soup. the world is yours!
